The Joy of Foraging No. 2: Elderflowers

Elderflower and Strawberry Cordial

I’ve been aching to make elderflower cordial every time I go out in the garden, catching their heavy scent as soon as the door’s open. Husband-to-be is less enamoured with elderflowers but suggests adding strawberries (some he’s grown in the broken wheelbarrow in the photo) which would make it Husband-to-be-friendly. A perfect match. It’s done! Wedding guests will be able to tell you how it turned out… (recipe from sister-in-law-to-be originally from mother-in-law-to-be!).

I’m feeling very envious that you’ve got elderflowers in your garden. We used to make a kind of elderflower “champagne” which was delicious and I’ve been reminded of it this year because a neighbour has a tree which has been covered in flowers - just out of reach of my greedy hands. The only other elderflowers I’ve seen have been on busy streets where I think they will be very polluted by car fumes/lead etc.

The addition of strawberries sounds inspired - a perfect marriage, how symbolic!

Hi Moira, I’d say come and have some of our elderflowers but they’re already going over!

Did your elderflower champagne always work? I made it several years running and it was either glorious or flat (maybe I didn’t pick it on a warm enough day) - hence playing safe this year…as well as being dubious about transporting it to the wedding in case it exploded! That’s what happened to some of last year’s ginger beer when we risked putting it in 2L plastic bottles!
