Great ingredients need good recipes!
Kreglinger Europe commissioned me to develop recipes and produce samples using their ingredients to increase the impact of their stand at the FIE (Food Ingredients Europe) exhibition. There are few things I enjoy more than walking into a kitchen with my arms full of ingredients ready to start working on recipes I have in mind, so the challenge was a happy one.
The resulting winners were:
Wattleseed Granola – featuring Aboriginal wattleseed with its complex taste between chocolate, coffee and hazelnut, nutrient-rich rice bran, rice syrup and vanilla flavour.
Granola Bars – made using the same granola but with a lovely chewy texture and enhanced with freeze-dried strawberries & raspberries.
Cupcakes – showcasing natural colours and flavours… giant for display and mini for tasters.
Savoury Biscuits – made with another native Australian spice, (well perhaps not a spice as such – it’s a relative of the tomato) called Akudjura, rice bran and a little hemp oil.
Handjes – these weren’t my invention, except for the use of rice bran as a nut-free replacement for ground almonds on the top, but they are a rich shortbread speciality from Antwerp, where Kreglinger’s head office stands tall in the beautiful Grote Markt square.
